Rice doesn't hugely agree with me, disappointingly, but my go-to replacement for it is coarse bulghur wheat and vermicelli (Bodrum brand does a good one), which I cook in slightly weaker vegetable stock. A different flavour altogether, but very savoury and delicious, most of these toppings would work great with it.

I think the internet often makes us think that thoughtful meals requires lots of effort or meal prep but that just doesnt need to be the case

yogurt + three beverages
Chopped onion (red or white), chopped tomatoes, and a squeeze of lemon juice (R+3), okra & tinned diced tomatoes or passata. Plenty of salt with both.
Good rice with butter and a pinch of shredded parmesan is my go-to comfort food/easy meal.
